Here's the thing I'm following a strict high protein diet and wanted to come up with something as an alternative to my grandmother's Egg Casserole so Here is my Faux-sage Egg Casserole.
Preheat oven to 350 and lightly spray a 9x13 cake pan (preferably one with a lid, but don't spray the lid you'll just have to wash it before you put on top of your cooled casserole)
First Ingredients:
4 Whole Eggs
1 cup Skim Milk
12 Morning Star Original Sausage Patties (2 boxes) cooked and cut into pieces
3 Tbsp Whipped Cream Cheese
1 1/3 C. Shredded Cheese (This one has Mozzarella but it's excellent with Cheddar too!)
2 Cartons Egg Beaters
Seasoning to taste
I prefer garlic salt, onion powder, and black pepper.
Select medium sized bowl and crack your four eggs beat with a fork until they are fluffy.
Add milk and whish for a few more seconds.
Add Cream cheese and Sausage Pattie pieces whisk with fork until cream cheese is evenly distributed
Add the shredded cheese and seasonings mix.
Lastly add the 2 cartons of Egg Beaters and mix.
Pour mixture into prepared 9x13 pan.
Bake for 50-60 minutes top should be slightly brown and a knife inserted into the center should come out clean.
Let the casserole sit it will deflate and be the perfect eating tempurture about 10 minutes out of the oven.
Cut into 12 pieces and enjoy.
This recipe can be halved and baked in an 8x8 pan and cut into 6 pieces for the same amount of calories and protein!
You can see I clearly didn't take the picture before I ate a serving. This is a favorite in my home and it's nice and healthy.
